Apple and Berry Crumble

Ingredients


➡️For the topping

150g jumbo oats

100-150g ground almonds

2 tablespoons of melted coconut oil

6 tablespoons of maple syrup

1 tablespoon of smooth almond/peanut butter

➡️For the filling

250g frozen mixed berries ( I used 1 cup mixer berry sauce leftovers, recipe bellow if needed)

4 apples, peeled and cut into chunks

juice from 1 orange

2 tablespoons of coconut oil

4 tablespoons of coconut/normal sugar

🔸Method

1. Preheat the oven to 180C/365F/Gas mark 4.

2. Make the filling by placing all the ingredients into a pan over a medium heat. Cook for 10 minutes, or until

the apples begin to soften.

4. While the base cooks, make the topping by mixing all the ingredients together in a large bowl until well combined.

5. Once the fruit is cooked, make the crumble. Spoon the fruit into the bottom of a baking tray and spoon the crumble topping on top.

6. Bake for 20 minutes, or until the top turns golden.

Serve with your favourite ice cream.

💚Berry sauce ingredients

250 gr summer fruits mix, frozen or fresh

5 tbsp brown sugar

2 tbsp corn starch

3 tbsp lemon juice


💚Making the berry sauce


  1. Place all ingredients in a pan and cook over low-medium heat.

  2. Stir until the sauce is thick and sugar melted.

  3. Leave to cool until it reaches room temperature.
