Banana Loaf

➡️Ingredients


2 very ripe bananas,

1 banana cut in half

125 gr unsalted butter, melted

100 gr brown caster sugar

2 tbsp maple syrup

1 tsp vanilla extract

1/2 tsp ground cinnamon

2 medium eggs

175 gr flour

1 tsp baking powder

Raisins, cranberries, chopped walnuts

➡️Method

  1. In a bowl add all wet ingredients and mix until fluffy.

  2. Bring in dry ingredients and stir until well combined.

  3. Line a 1 litre loaf tin with grease proof paper. Slightly grease with melted butter.

  4. Cut a ripe banana in half and place it on top.

  5. Cook the cake in a preheated oven at 180C/fan 160 for 45-60 minutes until golden brown.

  6. Check if it’s properly cooked by poking a wood skewer, if it’s clean than the cake it’s ready to come out.

  7. Leave to cool and serve.

  8. Enjoy!
