Ingredients
135g/4¾oz flour
1 tsp baking powder
½ tsp salt
2 tbsp brown sugar
130ml/4½fl oz milk
1 large egg
2 tbsp melted butter (allowed to cool slightly), plus extra for cooking
250g blueberries
To serve
maple syrup

Method
Mix the flour, baking powder and salt into a large bowl. In a separate bowl, lightly whisk together the egg and sugar, then whisk in the melted butter.
In a blender, add the milk and blueberries. Blend until smooth. Add it to the egg and mix until well combined.
Pour the wet mixture into the flour mixture and, using a hand mixer beat until you have a smooth batter. Any lumps will soon disappear with a little mixing. Let the batter stand for a few minutes.
Heat a non-stick frying pan over a medium heat and add a knob of butter. When it's melted, add a ladle of batter. It will seem very thick but this is how it should be. Wait until the top of the pancake begins to bubble, then turn it over and cook until both sides are golden brown and the pancake has risen to about 1cm/½in thick.
Repeat until all the batter is used up. You can keep the pancakes warm in a low oven, but they taste best fresh out the pan.
Serve while fresh with fresh fruits and chocolate sauce.
🍫Chocolate Ganache recipe in 2 steps
Ingredients
50 gr unsalted butter
150 ml double cream
3 heap spoons of Nutella
Method
Add all ingredients in a small pan.
Place on medium heat and mix until well combined. Usually it takes around 2-3 minutes for the butter to melt and the sauce to form.
Remove when you have a smooth sauce.
🫐Berry sauce
Ingredients : can be adapted with your fridge stock, frozen berries are great as well.
150gr raspberries
200gr pomegranate seeds
100gr blueberries
50gr cherries
50gr blueberries
30gr goji berries
5 tbsp brown sugar
2 tbsp corn starch
3 tbsp lemon juice
Method
Place all ingredients in a pan and cook over low-medium heat.
Stir until the sauce is thick and sugar melted.
Leave to cool and serve.
