These jam filled rolls are easy to make and very versatile. Use your favorite jam, Turkish delight or Nutella and you’ll have the perfect breakfast or snack.
🔸Ingredients for 10-12 croissants
500 gr flour
20 gr fresh yeast (or 1 sachet 7gr dry yeast)
250 ml of lukewarm warm milk
80 ml oil
2 egg yolks
2 tablespoons agave syrup or sugar
🔸Filling :
4-5 heaped spoons of Jam of your choice (I used it today plum jam) + 50 gr grated walnuts
300 gr Turkish delight, cubed
🔸Egg wash:
1 egg yolk
1 teaspoon agave syrup
2-3 tbsp milk
Syrup:
3 tbsp honey
5 tbsp warm water
All ingredients must be at room's temperature.
Method
If using fresh yeast, we activate it with a 3-4 tbsp warm milk and a teaspoon of agave syrup. Let it double in volume for about 10 minutes (if using dry yeast you can skip this step and add it directly with the rest of the ingredients).
In a large bowl add the milk, sweetener ( agave syrup or sugar), the activated yeast or dry yeast, egg yolks and oil. Give it a stir. Add in the flour and salt and knead the dough for 5 minutes by hand or using a stand mixer. We will get a sticky bread-like dough.
Place the dough in a greased bowl, cover with clinging film and a clean towel. Let it rise in a warm place for about an hour until doubles its volume.
When the dough has doubled in volume, we divide it into 12 equal parts. Using a rolling pin, shape each part in a rectangle with 3mm thick.
Place the filling in one of the parts and on the other side with with the help of a knife we cut the strips equal in thickness, about 1cm.
Roll the croissants and put them in a tray lined with baking paper. Cover with a clean towel and leave them for another 15 -30 minutes to rise.
For the egg wash, add all ingredients in a small bowl and give it a gentle mix. Grease the croissants and bake for about 20-25 minutes in a preheated oven at 200C/392 F/Gas Mark 6 until golden brown.
When ready set aside to cool a d in the meantime make the syrup. Add honey and warm water in a bowl and mix until the honey is dissolved.
Brush the croissants with this syrup and serve while fresh with a cup of coffee or a tea.
Keep them in a sealed container up to 2-3 days in a cold place.
