Avocado Omelette Roll

Enjoy the perfect breakfast with this quick and super healthy recipe. Start your day in a positive way.



Ingredients

serve 4


1 ripe avocado 1 tomato

2 eggs

4 wraps

mozzarella grated

salt

pepper

Fresh lemon juice


Method:


  1. Beat the eggs in a bowl, season with salt and pepper. In a pan sprinkle some olive oil and put the mix on medium heat. Turn the omelette when is done and cut it into pieces with the spatula in order to fry better. Transfer the omelette on a plate to cool.

  2. Cut the avocado into small pieces, place it in a bowl and sprinkle with some lemon juice in order to maintain its nice colour, otherwise the flesh of the avocado will become darker. Cut the tomato into small pieces as well and mix it gently with the avocado after seasoned with salt and pepper.

  3. Place the wrap on a cutting board and start to add the fillings: some omelette, the tomato avocado mix and some mozzarella grated on top.

  4. Roll the wrap, place it in a pan, on low-medium heat. Turn on each side until golden-brown.

  5. Enjoy your Avocado Omelette Roll.
