A delicious Turkish vegetarian dish of fried vegetables with tomato sauce. A kind of appetiser, side dish or meze served hot or cold.

2Â Eggplant, diced
1 Zucchini, diced
2 Potato (peeled and diced)
1 Green Pepper, diced
1/2 cup âsunflower oil
1/4 tsp+ a pinch of âsalt
1/4 tsp+ a pinch of âblack pepper powder
2 tbsp âolive oil
4 tomatoes, diced
1 Red Chili (seeded and diced)
2 tbsp âParsley (finely chopped)
Yogurt with garlic for serving, optional
2 Garlic cloves (chopped)

Method
Fry eggplant, zucchini, potato and green pepper in batches for 3 to 4 minutes on medium heat until tender. Season the vegetables with a pinch of salt and black pepper powder.
In the meantime, make the tomato sauce.
Add tomatoes to a pan with garlic, and olive oil. Cook 4 minutes. Season with salt and pepper. Finish by adding the chilli and parsley. Simmer 4 minutes and itâs ready.
In a bowl add fried vegetables and tomato sauce. Mix well and serve with garlic yogurt on top.
