Chickpea Ratatouille


Chickpea Ratatouille, such an amazing recipe, easy to make, healthy and so nutritious.

Ingredients

Serve 4

*1 aubergine

* 1 courgette

* 1 red pepper

* 1 yellow pepper

* Olive oil

* 1 onion

* 1 tsp smoked paprika

* 1 tbsp tomato paste

* 1 x 400 g tin of chopped tomatoes

* 2x 400 g tin of chickpeas

* 30g coriander and parsley, chopped

* 2 cloves of garlic, finely chopped


Method


* Preheat the oven to 220°C.

* Cut the vegetables into 2-3cm cubes. Place into a tray, drizzle with oil, season with salt and pepper.

* Toss well and roast for 15-20 minutes. I used the grill setting on my oven.

* Heat the olive oil in a pan, add the onions, then fry for 2-4 minutes.

* Stir in the paprika and tomato paste. Add the

chopped tomatoes, season and simmer for 10

minutes, then stir in the chickpeas and roasted

vegetables. Cook for 3-5 more minutes.

* Stir in the garlic and herbs.


Serv with pita bread, slightly grilled wholewheat wrap or any other bread of your choice. Goes well with chicken skewers or on its own. Hope you enjoy!
