Ingredients
Serve 4
1/2 red pepper
1/2 yellow pepper,
1/2 orange pepper
1/2 aubergine
1 carrot
1/2 courgette
1/2 soft cabbage
400g cooked chicken breast, grilled
*if you don’t have cooked meat than use 2-3 diced chicken breasts, add them into a pan with some cooking oil, 4 tbsp, then stir- fry the chicken for about 3-5 mins, until golden on medium-high heat. From here continue to add the veggies as mentioned bellow.
4 tbsp oil
250g Udon Noodles
Sauce mix:
2 tbsp dark soya sauce
4 tbsp light soya sauce
2 tbsp oyster sauce
2 tbsp sesame oil
1-2 tbsp Sriracha sauce
2 garlic cloves, grated
To serve: a small bunch of green onions, sliced and sesame seeds

Method
Start by preparing your vegetables, they need to be thinly sliced.
Add oil to a pan and fry the aubergine until soft, 3-4 minutes.
Bring in the other vegetables and cook for another 4 minutes on high heat, stirring often.
In the meantime add all sauce ingredients and mix and cook the noodles according to the package.
Add the sauce mixture to the pan together with the noodles.
Give it a good stir and serve with green onions and sesame seeds.
