Vegan Rainbow Brown Rice

A recipe ready in minutes and it easily can be adapted with whatever vegetables are available in your fridge. Serve 4

Ingredients


1 carrot, diced

1 small onion, finely chopped

1/2 yellow pepper, diced

1/2 red pepper, diced

1 courgette, diced

150-200 gr cooked brown rice

3-4 tbsp olive oil

1 garlic clove, finely chopped

Salt & pepper


Method


  1. Sauté the onion, carrot and garlic for 3-4 minutes.

  2. Add the peppers and courgette and cook until softened.

  3. Season with salt and pepper.

  4. Add the rice and stir-fry for 3-4 minutes until hot.

  5. Serve and enjoy!
