Turkish P I D E with roasted pork leftovers and spinach
➡️Ingredients
🍃Dough:
300 g flour
195 ml warm water
4 g dry yeast
5 gr sugar
4 g salt
2 tbsp olive oil
1 egg + a splash of milk for the egg wash
Sesame seeds
🍃Filling with pork leftovers
200 g pork leftovers or any other meat
1 large onion, chopped
1/2 red bell pepper, chopped
50 ml tomato juice
3 tbsp olive oil
1 tbsp paprika
salt and pepper to taste
50 g feta cheese + mozzarella grated
🍃Filling with spinach
500 g fresh spinach
1 egg
50 g feta cheese + mozzarella grated
1 small onion, chopped
➡️How to make the dough?
Add water, sugar and oil to a bowl, bring in the yeast and 1 tbsp flour. Mix and set aside 10 minutes.
Bring in the flour and salt. Knead 5 minutes. Cover the bowl with clinging film and leave to rise 60 minutes.
When ready, divide in two equal parts. Roll out the dough on a greased surface into an oval shape, add the mixture in the middle, grated mozzarella and crushed feta on top.
Leave a 2cm border all around. Brush the ends with water. Pinch ends together to seal then fold the sides of the pide in. Leave to rise 20 minutes.
Brush the edges with egg wash and sprinkle sesame seeds.
Bake 15-20 minutes in a preheated oven at 200C/390F switching trays halfway, until the crust is golden.
➡️How to make the filling?
Heat oil in a skillet over medium heat.
Cook onion for 3 minutes until translucent, than bring in the red pepper.
Add the meat, tomato juice, salt & pepper.
Cook over medium heat for 5 minutes.
Cool before using.
➡️How to make the spinach filling?
Heat oil in a skillet over medium heat.
Cook onion for 3 minutes until translucent.
Add spinach, cook until just wilted (add in batches if necessary). Stir in salt & pepper. Cool before using.
Add a beaten egg over after sealing the dough.
