Baked Zucchini

Serve 4


🍃Ingredients

2 medium zucchini ( courgettes )

2 eggs

3 tbsp flour + extra 5 tbsp

50 gr grated parmesan

salt

pepper

smoked paprika

olive oil

🍃Method


  1. Preheat the oven to 220°C/425°F/gas 7.

  2. Slice the zucchini into 1/2’’ (1 cm) thick rounds.

  3. Slightly beat the eggs, add 3 tbsp flour, season with salt and pepper. Mix until smooth.

  4. Place 5 tbsp flour into a shallow bowl.

  5. Coat a slice of zucchini with a thin layer of flour. Shake off the excess.

  6. Dip in the egg wash and then on a prepared tray, lined with baking sheet.

  7. Repeat until all the slices are used.

  8. Drizzle olive oil, grated parmesan and smoked paprika over the slices for a last seasoning.

  9. Bake for 5-7 minutes unti golden brown.

  10. Serve with your favourite dip.

  11. Enjoy!
