Beans and Quinoa Fritters

Quick and crispy baked vegetable fritters. Toss ingredients in a food processor and your meal is ready. A new way to eat your veggies, healthy and no fry.


Ingredients

serve 4


3 large carrots

2 red onions

2 sweet potatoes

500 gr cooked beans

400 gr cooked quinoa

5 spring onions

100 gr bread crumbs

150 gr mozzarella grated

3 tbsp dried or fresh parsley

2 tsp smoked paprika

1 tsp pepper

2 tsp salt

3 - 4 eggs

4 tbsp vegetable oil

Optional: grated parmesan


Method

  1. Sauté the carrots, onion and sweet potatoes until soft on low-medium heat. Set aside to cool when cooked enough.

  2. In a food processor add the veggies, beans, eggs, garlic and mix until smooth.

  3. Transfer in a bowl, than bring in the rest of ingredients.

  4. Mix everything together until well combined. Add more bread crumbs if needed, so the mixture could be shaped easily.

  5. Get a bowl of water and soak your hands before shaping the mixture, it won’t stick to your hands as much. Or just use a spoon to give a rough shape.

  6. Line a tray with parchment paper, arrange the fritters so they don’t touch each other. Sprinkle with olive oil and grated parmesan. Bake them for 20-30 minutes until golden brown in a preheated oven at 180C/350F/Gas mark 4.

  7. Serve with salsa, guacamole, tzatziki, humus or with a small salad. The combinations are endless 😊!
