➡️Ingredients
200 gr of your favourite pasta
2 green pointed cabbages
1 large onion, finely chopped
1 large carrot
50 ml tomato juice
250 ml/ 1 cup stock of your choice
3 tbsp olive oil
2 bay leaves
2 tsp salt
1 tsp pepper
To serve: grated parmesan, chilli flakes.
➡️Method
Start by cutting the cabbage as thin as you can and set aside.
Sauté the onion until golden, add the carrot grated and cook for another 2 minutes.
Add the cabbage, stock and bay leaves.
Cook on low-medium heat until the cabbage is very tender, about 30 minutes. Bring in the tomato juice, season with salt and pepper.
Cook for another 5-10 minutes, stirring once in a while so it doesn’t stick to the bottom and burn.
Meanwhile cook the pasta according to the package instructions. Add it to the cabbage and mix until well combined.
Bring to perfection with some grated parmesan, extra pepper and/or chilli flakes for an extra kick.
