Caramel Bubble Waffles

🌿Waffles Ingredients

Makes: 25 to 30 small waffles


* 4 eggs

* 250 gr / 9 oz sugar

* 250 gr / 9 oz self-raising flour

* 250 gr / 9 oz butter (melted)


Method


1. Seperate the eggyolks and whites and put them in a bowl.

2. Stir the eggyolks, while very gradually adding the sugar, flour and melted butter.

3. Whisk the whites and fold them into the eggyolk-mixture.

4. Grease the waffle-tin (you only have to do this once) and bake the waffles (size: 1 tbsp) on a medium heat until golden brown.

5. Transfer to a rack until cooled.

🌿Caramel sauce Ingredients


1 cup (210g) of sugar

6 tablespoons (85g) butter (salted or unsalted)

1/2 cup (120ml) heavy whipping cream


Method


1. Melt the sugar in a medium pan, over low-medium heat, without burning it. You can add 1-2 tsp of water.

2. Bring in the butter and mix.

3. Add the cream and wisk until smooth and silky. * Store in the refrigerator for up to 2 weeks. Warm before serving.


Serve the waffles with fresh fruits and caramel sauce.
