Stuffed Flatbread

❇️Ingredients for dough

500 g bread flour

300 ml milk

10 g dry yeast 4 tbsp oil 1 egg 1/2 tsp salt

Fillings of your choice


➡️ Feta with herbs


🍃Ingredients:

400gr feta cheese

100gr mozzarella grated

5 spring onions


🍃Method

Bring together the mozzarella and feta grated, and the onions, finely chopped. Mix until well combined.

Depending on your preferences, the onions can be replaced by chopped parsley, dill or chives.

➡️ Sweet kurd


🍃Ingredients

500 gr cottage cheese or Kurd cheese

80 gr sugar

Optional: 1/2 tsp cinnamon

4 tbsp semolina, if using cottage cheese (absorbs the moisture from the mix)


🍃Method: Mix all ingredients until well combined.

➡️ All sorts of thick jams: pear, apple, quince, plums, etc.

❇️Method


  1. Start by dissolving the yeast into the warm milk.

  2. Add it to the flour.

  3. Beat the egg slightly and transfer into the mixture with the salt.

  4. Knead the dough by hand or using a stand mixer for 2 min.

  5. Add the oil and continue the kneading for another 1-2 minutes.

  6. Place the dough into a bowl greased with oil, cover with foil and leave to rise until double in size.

  7. Divide the dough into small balls. Spread some flour on your worktop and using a roller pin roll back and forth until you have a disk, 1cm thick.

  8. Add the filling in the middle.

  9. Bring the sides over, until the filling is completely covered by dough.

  10. Seal the dough.

  11. Turn your ball upside down and roll gently so that the layer of dough does not break. Continue until is 2 cm thick.

  12. Sprinkle some oil in a pan and place it over low-medium heat.

  13. Place the flatbread and cook until golden-brown.

  14. Continue until all the ingredients are used.

  15. Serve while fresh.
