Creamy Vegan Lentil Soup

🌿Ingredients

( 6 servings )


200gr dried lentils ( I used halves red lentils)

1 onion

3 carrots

2 potatoes

4 garlic cloves

3 cups stock ( chicken or veggies)

Sprinkle of olive oil

Parmesan


🌿Method


1.Start by peeling your veggies and wash your lentils until water is clear (halves lentils need a good wash).


2.In a pot sprinkle some olive oil and cook your chopped onion until translucent. Add chopped carrots, potatoes and garlic cloves. Leave to tender for 3-4 minutes with the lid on.


3.Add the stock and leave to simmer until lentils are cooked. Blend your soup until smooth. Season with salt, pepper to your taste. Avoid too much salt as the parmesan is already salted.


4.Serve with grated parmesan, a sprinkle of olive oil, pepper and/or chilli flakes.
