Easy Italian Lasagna Recipe


Easy Italian Lasagna Recipe, a classic recipe of one of the most loved foods in the world. The ultimate comfort food is homemade lasagna.

Prepare this easy lasagne ahead of time and save in the freezer, uncooked, for when you need it during a busy week. Then just bake for an extra 45 mins.

Serve 4-6

👉Ingredients

4 tbsp olive oil

2 medium onions, finely chopped (1 leek)

1-2 big carrots, finely chopped

2-4 celery sticks, finely chopped

1 aubergine

5 garlic cloves, finely chopped

500 gr beef mince

100 ml/ 1/2 cup dry red/white wine (optional)

1 litre/4 cups tomato juice

150 ml / 1/2 cup milk

1 litre/4 cups chicken or beef stock

1 tsp cinnamon

1 tsp nutmeg

1 tsp paprika

2 bay leaves


👉Béchamel sauce ( for lasagna)


100 gr butter

1 tsp salt

1/2 tsp pepper

2 tbsp flour

600 ml milk

1/2 tsp nutmeg


🍃Method

1. Sauté the onion, add the carrots, celery, aubergine and garlic. Leave to cook until soft.

2. Add the mince, mix and sauté breaking up with the back of a spoon, until browned, about 15 minutes.

3. Pour in the wine, if using, and boil until the alcohol is evaporated. Add in the seasoning’s.

4. Bring in the tomato juice, stock and bay leaves. Leave to simmer about 60 minutes on low heat and stir occasionally. Be careful to stir once in a while so that it won’t stick to the bottom.

5.Heat the milk, add it to the pan and leave to boil until well combined, around 30 minutes.

6.Mix in half of the béchamel sauce and stir. Now the ragù is done. Set aside until used.


🍃Making the béchamel sauce


1. Melt the butter in a sauce pan.

2. Add flour and mix.

3. Gradually add the warm milk and constantly stir.

4. When it has a smooth consistency remove from heat.

5. Add salt, pepper, nutmeg and mix.


When making lasagna combine 1/2 béchamel sauce with ragú. The other half is used when layering the lasagna.

It can be stored for two days in the fridge and reheated when needed.


🍃How to assemble the lasagna, do this by layering the lasagna sheets, ragù, béchamel sauce, mozzarella and parmesan grated. Continue until all ingredients are used.

🍃Bake 35 minutes in a preheated oven at 190C/370F/Gas mark 5.


🍃Serve with your favourite salad.
