Lamb with Braised Leeks and Rice Pilav

A beautiful dinner made in less than 60 minutes. It could’ve gone better a Tabbouleh with pomegranate or Red Cabbage Salad. Next time for sure, as this combination will be on repeat at least every two weeks.

Braised Leeks with Parmesan

➡️Ingredients

2 tbsp olive oil, divided

2 tsp unsalted butter, divided

6 medium leeks, trimmed, halved lengthwise, washed, and dried

1/2 cup dry white wine

1/2 tsp kosher salt 1/2 tsp black pepper

1 ounce Parmesan cheese, grated (about 1/4 cup)


➡️Method

Place 1 tbsp oil and 1 tsp butter in a large, high-sided skillet over medium-high, cook until butter foams.

Add half of leeks, cut side down; cook 5 minutes, pressing leeks occasionally, until cut sides are deeply browned.

Remove leeks from pan. Repeat procedure with remaining oil, butter, and leeks.


Return all leeks to pan; add wine. Reduce heat to medium-low; cover and simmer 20 minutes or until leeks are tender when pierced with a fork. Stir in salt and pepper. Transfer mixture to a platter; top with Parmesan cheese.


Rice Pilav & Broken Vermicelli

Ingredients

1 cup of rice, washed and drained

3 tbsp of shortcut vermicelli

1 tbsp butter

2 tbsp of vegetable oil

2.5 cups of boiling water

salt

Method

  1. Take butter and oil into a deep pan and heat until the butter melts.

  2. Add the vermicelli and stir fry until they turn into light brown.

  3. Add the rice and salt and stir fry until they start to stick together and become crunchy.

  4. Add the water and mix.

  5. Cover and cook on low heat until the rice absorbs all the water and is tender.

  6. Turn off the heat and rest for 15 minutes, before serving.

British Lamb Chump Joint, marinated with garlic, sea salt and black pepper, finished with a Sprig of Fragrant Rosemary


For best results remove from the refrigerator for up to 20 minutes prior to cooking.

Preheat the oven at 180°C / 350°F / Fan 160°C / Gas 4

Place the lamb in a roasting tin in the middle shelf of the oven.

For Medium: 35 minutes per 500g.

Well done: 50 minutes per 500g.
