Lentils & Beans Falafel

This falafel recipe is easy and good for your body. They are tasty in wraps, patties, burgers, salads and even on their own as a snack between meals.












Ingredients


serve 4

  • 1/2 cup of cooked or canned red lentils (halved or whole)

  • 1 cup of cooked or canned green lentils

  • 1 can of cooked beans

  • 1 medium red onion

  • 1 medium yellow onion

  • 4 garlic cloves

  • 3 eggs or flax eggs

  • 1 cup of breadcrumbs

  • 2 potatoes

  • a bunch of parsley

  • a bunch chive

  • 1 spoon of flour

  • 1 tsp salt

  • 1/2 tsp pepper

  • 1/2 tsp chilli flakes

  • 1/2 sweet or spicy paprika

  • olive oil to fry

Method:

  1. Start by washing your red lentils thoroughly until the water is clear. Place them in a pot with water and bring them to boil until tender. Follow the same steps for the green lentils. Once boiled, drain the water and leave them to cool, until they get to room temperature.

  2. In a food processor place 1/2 of the amount of red and green lentils, 1/2 of each onion roughly chopped, 1/2 cup breadcrumbs, 1/2 of the parsley and chives, the can of beans, the garlic cloves, eggs and the flour. Blend everything and move into a large bowl.

  3. Finely chop the onions left, the remaining parsley and chives, and add them to the bowl. Peel the potatoes and grate them, squeeze the excess water (I always use my hands to remove the water, by squeezing just the amount of grated potatoes that fits in my hand). Add them into the bowl together with the remaining breadcrumbs and lentils. Season with salt, pepper, paprika and chilli flakes.

  4. Mix all ingredients and add more breadcrumbs if too soggy.

  5. Sprinkle some olive oil into a pan and place it on medium heat. Use a spoon or an ice cream scoop to take some mixture and place it in the pan, making small flat balls. Leave them to fry until golden brown. Continue to repeat this process until the mixture is finished.

  6. Optional you can mould some burger like shapes in a pan, sprinkle with olive oil and cook them in the oven for 15-20 min until golden brown at 200°C or 400°F.
