Gnocchi has its roots in Roman times. These little dumplings are a replacement for pasta or can be served as a side dish for some main courses. Choose your favourite sauce enjoy them any day of the week. My proposal is a buttery pesto sauce with butterfly king prawns. This simple recipe is ready in minutes and goes well with a glass of chilled white wine. It’s a go-to recipe when time is a challenge. Serve 4
Ingredients
500 gr fresh gnocchi
200 gr raw peeled king prawns
2 tbsp pesto
50 gr butter
2 cloves of garlic, chopped
50 ml white wine
15 gr grated parmesan
salt&pepper
Method
Cook gnocchi in a pan of boiling salted water for 2 minutes.
Meanwhile, run your knife down the back of 5-6 prawns, so they’ll butterfly as they cook, then finely chop the rest.
Put a large non-stick frying pan on medium heat.
Melt the butter, toss in the garlic and whole prawns to cook for 2 minutes, together with the wine.
Toss the chopped prawns and cook for another 2 minutes.
Mix in the pesto and transfer gnocchi into the pan.
Season with pepper and grated parmesan.
