Rice Tuna Salad

A well-made salad must have a certain uniformity; it should make perfect sense for those ingredients to share a bowl.

▶️ Ingredients

serve 4

1 canned tuna, preferably in brine

100 gr cooked quinoa (32 gr uncooked)

400 gr cooked rice (130 gr uncooked)

2 tomatoes

1 red onion

50 gr corn

2 tbsp lemon juice


To serve: olives, pesto, parmesan.


Method


  1. Tip in the quinoa in a pan with 70 ml water, after you washed it throughly. Let it cook until all water is absorbed, around 3-5 minutes or doubled in size.

  2. Rinse the rice until the water is clear, boil it in a pan with 260 ml water with a knob of butter on low heat and the lid on.

  3. In the meantime, cut all vegetables.

  4. In a large bowl, add in all ingredients, sprinkle olive oil and lemon juice, season with salt and pepper to perfection.

  5. Serve with pesto, olives and grated parmesan.

  6. Enjoy!
