Enjoy baked oats for a healthy breakfast with apples, bananas, sour cherries, blueberries or raspberries, even chocolate chips. Serve warm with chocolate ganache, yogurt of your choice and more fresh fruit to make it extra-special.
🔸Ingredients
150 gr oats, blended
2 eggs
100 ml cow or vegetable milk
50 ml double cream
1,5 tsp baking powder
a pinch of salt
1 tbsp granulated sugar or other sweetener (maple syrup, honey)
1 tsp vanilla extract
1-2 apples, peeled and cut in small squares or any other fruits ( 1 mashed banana, raspberries, blueberries, etc)
50 gr sour cherries

🔸Method
Heat the oven to 180C/160C fan/gas 4.
In a large bowl add the eggs, milk, double cream, sugar, vanilla extract and give it a good mix.
Put the oats and baking powder in a blender and pulse a few times until they start to resemble flour. Add it to the wet ingredients and stir, then bring in the apples.
Lightly oil a ceramic dish or 6 ramekins and add in the batter.
Bake for 15-20 minutes, or until well-risen and the baked oats spring back when lightly pressed.
Serve with chocolate ganache, yogurt or more fresh fruits, if you like.
