These simple bruschetta make breakfast about as good as it can gets. Find the ripest tomatoes and some fresh eggs and then do no harm to this beautiful plate. It feels like you’re eating a cloud! Keep it simple and enjoy!
Ingredients
serve 4
4 tomatoes, chopped
1 small onion, chopped
3-4 tbsp olive oil
salt
2 hard boiled eggs
toast 4 large slices
Optional: fresh basil, chilli flakes, grated parmesan

Method
In a medium bowl toss together the tomatoes, onion and olive oil.
Add salt to your taste and mix.
Place the pieces of bread on a plate.
Divide the tomato mixture over the tops and grate the eggs over.
