This is a super quick and easy recipe. It is one of my favourites for lunch or dinner, for an usual day or a special occasion. Once you tried it, it’s stuck in your menu for good. 💚
🌿Ingredients
1 onion
2 carrots
2 potatoes
2 broccoli florets
300g fresh spinach
4-5 cups chicken or vegetable stock
Olive oil
Grated parmesan
Pepper
Salt
Pesto (optional)
🌿Method
Start by chopping your onion. In a deep pan sprinkle olive oil, cook the onion until translucent, add the roughly chopped carrots and the stem of your broccoli. Leave for 3-5 min to soften.
Now add the chopped potatoes, the stock of your choice, the broccoli florets. Leave to simmer until soft, then add the spinach. At this stage leave all the flavours to come together for about 5-10 min.
Remove from heat and blend until smooth.
Season with salt and pepper.
Serve with croutons, créme-fraîche, a sprinkle of olive oil, chilly flakes for a nice kick, grated parmesan and finish with fresh pesto.
