🍁Crispy Sesame Chicken with a Sticky Asian Sauce

🍃Ingredients

Serve 4

5 tbsp olive oil

1 egg

3 tbsp cornflour (cornstarch)

10 tbsp flour

½ tsp salt

½ tsp pepper

½ tsp garlic granules

2 tsp paprika

3 chicken breast fillets or 4 turkey breast steaks chopped into bite-size chunks or stripes


Sauce:

1 tbsp sesame oil

2 cloves garlic - peeled and minced

1 tbsp rice vinegar or white wine vinegar

2 tbsp honey

2 tbsp sweet chilli sauce- use more or less depending on how spicy you like it

3 tbsp ketchup

2 tbsp brown sugar

4 tbsp soya sauce


To Serve:

steamed rice or rice pilav

2 tbsp sesame seeds

Small bunch spring onions- chopped

salad of your choice

🍃Method

  1. Start by placing the meat into a bowl. Add the oil, salt, pepper, garlic granules, the egg slightly beaten and cornstarch. Mix until all ingredients cover the meat evenly. Cover with clinging film and set aside for 20 minutes.

  2. In a separate shallow bowl add the flour and paprika and mix together.

  3. Heat the oil in a wok or large frying pan until hot.

  4. Dredge the meat in the flour mix and add to the wok and cook on a medium-high heat for 5-6 minutes, turning two or three times during cooking, until well browned. You may need to change the oil after the second batch. Remove from the pan and place in a bowl lined with kitchen towels.

  5. For the sauce, add all of the sauce ingredients to the hot wok, stir and bubble on a high heat until the sauce reduces by about a third (should take 2-3 minutes). Add the chicken back in and toss in the sauce to coat.

  6. Serve with rice and top with sesame seeds and spring onions.

🍁Rice Pilav & Broken Vermicelli


🍃Ingredients

1 cup of rice, washed and drained

3 tbsp of shortcut vermicelli

1 tbsp butter

2 tbsp of vegetable oil

2.5 cups of boiling water

salt

🍃Method

  1. Take butter and oil into a deep pan and heat until the butter melts.

  2. Add the vermicelli and stir fry until they turn into light brown.

  3. Add the rice and salt and stir fry until they start to stick together and become crunchy.

  4. Add the water and mix.

  5. Cover and cook on low heat until the rice absorbs all the water and is tender.

  6. Turn off the heat and rest for 15 min, before serving.
