This recipe is good for weeknight dinner. It is delicious and can be prepared in just 15 minutes.
🔸Ingredients
Serve 4
6 potatoes boiled, peeled and diced
1/2 English cucumber, sliced and cut into quarters
4 large tomatoes, diced
3 eggs, boiled and diced
150 gr olives
4 tbsp pesto
salt and pepper to taste
🔸Method
Add all ingredients in a large bowl.
Mix everything well and serve or cover it and refrigerate until serving.
