Oven Roasted Duck with Butternut Squash Puree

Ingredients

  1. 1 tbsp. unsalted butter

  2. 1 tbsp. olive oil

  3. 4 large duck legs, patted dry

  4. Kosher salt

  5. Ground black pepper


For sauce

  1. ½ cup unsalted butter

  2. 2 large garlic cloves, minced

  3. Fresh sage, minced ( or fresh mint )

  4. 1/2 grated lemon

For puree

  1. Nonstick cooking spray

  2. 1 medium-sized butternut squash

  3. Olive oil

  4. Kosher salt

  5. Ground black pepper

  6. 8 oz. mascarpone

  7. ½ cup parmesan cheese, grated


For garnish

  1. 1 tbsp. unsalted butter

  2. 4 whole sage leaves (mint leaves)
