Pesto Shrimp Gnocchi

Ingredients

Serve 2

500 gr gnocchi

180 gr uncooked prawns

1 tbsp garlic paste or 3 grated garlic cloves

2-3 tbsp pesto

30 ml white wine

olive oil

50 gr grated parmesan

salt and pepper

Method


  1. Cook gnocchi according to the package.

  2. In a separate pan heat the olive oil on medium heat, add the garlic and cook 1 minute.

  3. Add in the prawns and cook until no longer translucent, that’s about 3 minutes. Season with salt and pepper.

  4. Bring in the wine and cook until the alcohol is evaporated, around 2 minutes.

  5. Turn the heat to low and add in the pesto sauce and parmesan.

  6. Transfer the gnocchi to the pan with the shrimp.

  7. Give it a good stir and serve while hot.

  8. Garnish with more grated parmesan and chilli flakes if you like.

  9. Serve with white wine!

  10. Enjoy!
