Homemade Bread

🍃homemade artisan bread🍃• As most of know already, I love baking bread. The end result is so satisfying and sometimes I feel bad even cutting these beautiful loafs. It’s my way of finding a peaceful moment in the rush of everything, through our daily routine.

👉Servings: 1 loaf of approx. 1.5 kg


➡️Ingredients


1 kg of bread flour

700 ml of warm water

25g fresh yeast or 7 g dry yeast

20g of salt

a little oil to grease the worktop

Method

  1. Add 650 ml warm water in a large bowl together with the yeast and 2- 3 tbsp of flour. Mix everything with a balloon whisk and leave to rest for 10 minutes.

  2. Add the rest of the flour and knead.

  3. When the flour is incorporated, bring in the salt.

  4. Knead for 5 minutes by hand or using a stand mixer. If the dough is to stiff add the rest on 50 ml water. Adjust according to the flour absorption ability. Different flours absorb different amounts of water and therefore make doughs of different consistencies. The dough should not be stiff, either too loose.

  5. Remove the dough from the bowl, give it a nice stretch and fold with a splash of oil, bringing the corners towards the middle, repeat twice this proces. Place it back and leave to rise for 60 minutes at room temperature, covered with clinging film.

  6. Grease your hands with some oil and start a second round of fold and stretch. Shape it and let it rest another 30 minutes.

  7. In the meantime preheat your oven at the highest temperature, with a tray a boiled water inside.

  8. Score with your favourite pattern and bake at the highest temperature for 20 minutes.

  9. Remove the tray with water and bake for 25-30 minutes at 200C/400F/Gas mark 6.

  10. Let it cool on a rack and serve with some butter and rock salt. The simplicity of this will amaze you.
