Parmesan Baked Aubergine

Ingredients

2 aubergines

2 large eggs

1/2 cup plain flour

2 cups breadcrumbs (golden or natural)

Salt

Pepper

Garlic powder

Olive oil

½ cup grated parmesan


Method

1. Start by washing your aubergine and remove the green end. Slice the aubergine approx. 1cm thick, place them in a bowl, sprinkle with salt and leave to rest for 20-30 min. This process helps reduce their bitterness and make them softer.

2. Meanwhile, mix together the eggs, flour, season with salt, pepper and garlic powder and set aside.

3. Preheat your oven to 200C/Gas mark 6/390F.

4. Using a paper towel remove the excess water from your aubergines.

5. Line parchment paper in your tray. Take one aubergine slice dip it into the egg mix, then in breadcrumbs and place it in your tray. Continue to do so until the tray is full. Sprinkle with olive oil and parmesan and bake for 15-20 min until golden crispy.

6. Serve with guacamole, chunky Italian tomato dip (chopped tomatoes and red or green onions, seasoned with salt and a touch of olive oil, basil on top) and/or fresh mozzarella. Goes great in burgers, sandwiches or as a side.
